SQUASH IT UP!

- 1 small squash (a pumpkin, butternut, cheese...) - 1 pound sweet potatoes, peeled and cubed - 1 stick unsalted butter - 1/4 cup of honey - 1/2 cup brown sugar - CLOVES GONE WILD SALTOPIA Sea Salt to taste - mini-marshmallows - pecans (optional) Directions: Boil your cubed sweet potatoes in a pot of water. While they are boiling, wash and slice your squash selection into two halves. Place the halves on a baking pan and roast at 375 degrees for approximately 30-40 minutes depending on the size of the squash. Once fully roasted, you should be able to scrap the pulp of the squash easily from its skin. In a large mixing bowl, add your boiled, softened sweet potato cubes (drained from the water), squash pulp and stick of butter. Using a potato mashing tool, mix and mash these ingredients together. The butter should melt immediately from the heat of the squash and potatoes. Once mixed, add honey, brown sugar and CLOVES GONE WILD to taste. Mix and mash again well. Put entire contents of the mash into a deep baking pan. Finish with a thick layer of mini marshmallows and pecans. Roast again at 350 degrees for only a few minutes until the marshmallows are melted. Stay close to the oven so that the marshmallows don't actually burn! This will be a lovely twist to an old favorite! |
